Make A Gin Easter Cake!

Try making our 1947 Carrot Cake using Pickering's 1947 Gin, yes that's right, bake with Gin! Follow the recipe and method below, happy baking! 🥕   Ingredients: The Sponge: 225g Unsalted Butter 3 Large Eggs 275g Light Brown Sugar 30ml WholeMilk 30ml Pickering's 1947 Gin 300g Grated Carrots 100g Chopped Walnuts (optional) 15g Orange Zest  275g Self-Raising Flour 1.5 tsp Bicarbonate of Soda 1tsp Ground Cinnamon 1tsp Nutmeg The Icing: 100g Unsalted Butter 400g Icing Sugar 200g Cream Cheese 50ml Pickering's 1947 Gin 10ml Vanilla Extract   Method Preheat your oven to 180C/160C Fan and line your cake tin. Pour the unsalted butter and eggs into a large mixing bowl and add the sugar. Mix until combined. Add the grated carrots, chopped walnuts (if you're adding them) and orange zest into the mixture and fold through. In a jug add the whole milk and Pickering's 1947 Gin. Mix together and add this into your mixing bowl. Combine with the other combined wet ingredients. Add the flour, bicarbonate soda, cinnamon and nutmeg, combine/ fold slowly and not to over mix! and mix again Pour the mixture into the cake tin, and bake in the oven for 55-60 minutes. Make sure and test with a skewer before taking out to cool. Once baked, leave to cool in the tin for 10 minutes, and then cool on a wire rack. If your cake doesn't come out, it may not have finished baking, or you didn't line the tin well enough! With an electric mixer, beat the softened butter for a couple of minutes so its really smooth.  Fold through the the cream cheese so its combined, or beat on a low speed. Stir in Pickering's 1947 Gin and the vanilla extract. Gradually add in the icing sugar till its all combined – try not to beat too hard, you’ll want to do this bit by hand. You want to add enough for the icing to be firm. Once the cake is completely cooled, slather the icing on top. Smooth it over, and sprinkle on some fondant carrots (or chopped nuts such as walnuts and pecans) and then give it a sprinkle of icing sugar/spices!

This new tour will begin in our small distillery where you will learn how Pickering's Gin is distilled, bottled and labelled. Guests will then be taken upstairs to our VIP Boardroom to enjoy a G&T, four neat samples of our award-winning gins and an exclusive cocktail experience to illustrate the history of Gin through the ages. The small distillery has responded to increased demand for seasonal gifts by creating this limited-edition Gin distilled with real flowers and Scottish honey.   Pickering’s Heather and Honey Gin is based on the original Pickering’s Gin recipe dating back to 1947, this unique London Dry Gin is distilled with fresh flowers including heather, lavender, and rosehip. Since receiving such a great response from you lovely folk, Mixology With Marcus will remain a staple in our weekly social media updates. So, if you're needing some cocktail inspiration or just want to join in the Happy Hour, MWM will hit your timelines every Friday at 5pm.  How a brilliant idea came to be... Thanks to you lot we get plenty emails and messages asking for cocktail recommendations and how best to serve our #pickgin range. Team Pickering's were inspired and set-out to create a fun, interactive and easy way to share plenty Peacocktails with our Ginfriends. Pickering’s Gin have launched a range of four brand new festively flavoured gins along with their infamous, Brussels Sprout flavoured gin. The new festive flavours have been released as a follow up to the huge success of Pickering’s Flavoured Gin Baubles. Causing internet mayhem, Pickering’s renowned Gin Baubles came to the market by storm, selling out in just 82 seconds. The gin brand’s exciting, new festive flavours include, Christmas Cookie, Pecan Pie, Chocolate Orange and Later Than Eight – we’ll let you take a wild guess as to which flavour that is.     Distilled at Summerhall Distillery, Pickering’s Festive Flavours are based on the original recipe for Pickering’s Gin, including 9 botanicals with natural flavours and colours.  Co-Founder and Head Distiller, Matt Gammell comments: “It was a fun challenge for us to create these familiar festive flavours into delicious gins. The distilling team and I spent quite some time in our botanical room ensuring each flavour was perfectly balanced and tasted exactly how you would expect.” “I’m happy to say that the new festive flavours, didn’t have quite as pungent a smell as our Brussels Sprout Gin did… making the tasting and perfecting of these four spirits more enjoyable. We love the end result of these festive flavours and hope our customers can indulge and enjoy them with friends and family over the festive period.”   Pickering’s Festive Flavoured Gins are available as giftable 200ml and 50ml sized bottles. Double strain and top up with Champagne or Prosecco.  Sloe Royale 25ml Pickering's Sloe GinTopped up with Prosecco   Pumpkin Negroni 25ml Campari 25ml Pickering's Pumpkin Spice Latte Gin 25ml Frangelico 1 Egg white. Catching up with our local bars in Edinburgh is always a treat! We recently did a music and martini-maker night with the team at Victoria Bar in Leith. After plenty martini making and a sing-song we caught up with their bar team.  Line Wamberg- Bar Team  How many years have been bartending for? And, what’s your favourite part about being a Bartender? Almost 3 years, meeting people!  What’s your favourite drink to make?  Bloody Mary   Is there a firm cocktail favourite from your menu? If yes, what one? Bloody Boda   Pickering’s Gin is the house pour at Victoria Leith, what do you like about Pickering’s products? It’s just the most tasty gin I’ve tried! Always ask for it if I go out.   Do you feel Boda Bars and Pickering’s Gin share similar fans/ customers? If yes, why? I would say yes! Mainly because both companies are Edinburgh based and loved by locals.  What do you think gin’s future looks like in the trade? Good! It’s probably still the most popular mixer we serve.   Cameron Gillies- Bar Team How many years have been bartending for? And, what’s your favourite part about being a Bartender? 3 years & chatting to punters  What’s your favourite drink to make? A pint!!!   Daniel Hatton- Bar TeamHow many years have been bartending for? And, what’s your favourite part about being a Bartender? Not long, 2 or 3 years I think it is. I worked as a chef before and decided that what I missed from the job was customer interaction, which happens to be my favourite part of it.   What’s your favourite drink to make? Probably our Swedish Martini, it is so satisfying when you get the froth just right! Most often though it is just a tasty, tasty gin and tonic. Pickerings of course 😉  Is there a firm cocktail favourite from your menu? If yes, what one? Probably the Margarita, choosing it is always a good choice!  Pickering’s Gin is the house pour at Victoria Leith, what do you like about Pickering’s products? The branding, the bottle, the fact that it is made in Edinburgh in various garage-like rooms and that it is freaking delicious. Always my go-to gin!   Do you feel Boda Bars and Pickering’s Gin share similar fans/ customers? If yes, why? Definitely, you notice it when the customer says "Oooh yes!" when I mention that Pickering's is our house gin, which in my eyes seems to solidify the fact that we have similar fans.   What do you think gin’s future looks like in the trade? Exciting, with various local Edinburgh gin brands to try and new gins constantly popping up, it is hard to keep a track of what your favourite gin is. As long as gin companies keep on experimenting and releasing new gins, the less my liver will thank me.    Marc Zwetsloot - Manager How many years have been bartending for? And, what’s your favourite part about being a Bartender? Around 6 years now.The best part is definitely the people you meet. The interactions you have with people from all walks of life. Being that ear/council for people that possibly have no social circle.What’s your favourite drink to make? I really enjoy making Bloody Mary’s.Is there a firm cocktail favourite from your menu? If yes, what one? From our menu, I’d have to pick the Loke. Fruit and refreshing!Pickering’s Gin is the house pour at Victoria Leith, what do you like about Pickering’s products? I love Pickering’s because they’re just a small, simple, grass roots company. Everything is made with care, to a very high standard, by a very small team.Do you feel Boda Bars and Pickering’s Gin share similar fans/ customers? If yes, why? I think we do. We all appreciate small local business. Being a Leith bar, there’s a strong sense of community, and in turn, I feel we have a community with local businesses such as Pickering’s. We all look after each other.What do you think gin’s future looks like in the trade? I think gin has planted itself firmly as a popular staple in the trade. I believe it’s become slightly oversaturated in the last year or two by small, quick-cash start-ups, but the quality of Gin coming out of Scotland has been exceptional.

 The renowned Pumpkin Spice Latte has been made into a gin!    Edinburgh based distillers, Summerhall Distillery, announced the launch of the exciting new flavour as an addition to their handcrafted Pickering’s Gin range. With a unique twist on the ‘hot-drink of the season’ this new product is set to get coffee-lovers buzzing.    Distilled at Summerhall Distillery, Pickering’s Pumpkin Spice Latte Gin is based on the original recipe for Pickering’s 1947 Gin. A classic London dry with a warm and spicy kick – the perfect spirit to warm your cockles this Autumn.    Creating the beloved Pumpkin Spice Latte into a well-balanced gin was a project that called for the Pickering’s botanical engineers. Co-Founder and Head Distiller, Matt Gammell comments,   “This was a challenging, but exciting project for us. It was essential we harmonised the unique flavours of Pumpkin Spice with our original gin recipe, which required a lot of experimenting, tasting and perfecting.    In particular, working with coffee was a new direction for us and it was especially interesting when balancing the spices, with the sweetness of the vanilla and the bitterness and bite of the coffee. Nauticus Bar, Edinburgh With the Edinburgh Fringe Festival in full swing, we've been checking in with our local bars around Edinburgh. We caught up with Co-Founder, Kyle from Nauticus Bar, located in Leith. A bar who champions Scottish liquor and produce, and we're proud to have Pickering's Gin on their menu!   Q&A Favourite Gin Cocktail from each team member? "Mine [Kyle] is definitely a wet Martini or Negroni at the moment, going back to classic for sure. Meghan has said the same as me but also loves a White Lady! Matty's is a Clover Cub. Scotty smashes down Southside's like they're going out of fashion, so definitely a Southside." Why did you choose to champion Scottish produce, and where does gin fits into this? "We chose to champion Scottish produce because there is such a vast array of incredible products being made locally and in Scotland. We noticed there wasn't really any other bars focusing on products that were solely from the community around them. Leith especially has a long history with alcohol and it was inspiring to see what had been and what was coming up in Leith." What similarities do you feel there are between gin and other spirits? "Gin is in its own category for sure, there's so many different styles and flavour profiles." What do you think gin's future in the trade looks like? "I can't really see it stopping to be honest. There's been a huge boom in the gin market and people are far more educated and aware of what gin they want to drink, I don't think that's going to change."    Pictures by: @nauticusbar

It's elderflower season! Botanicals are at the heart of Pickering's Gin and the making of our story as The Botanical EnGINeers. Elderflower season usually runs from late May to mid-June and right now these gorgeous flowers are in full bloom. We've decided that we'll be sharing more with our Ginfriends on the beauty behind our botanicals.     The Beauty Behind Botanicals: Elderflower Facts You May Not Know! 1. Did you know that the elderflower got it's name because it's so old (history dating back to 460 BC) you'll find varieties of it all over the world!  2. There are over 25 varieties of elderflower around the world, and the berries also differ in colour.3. Elderflower contains antioxidants (including Vitamin C) meaning it's a perfect cure for illnesses including a cold.4. Feared by the devil... it is said that planting an elder plant outside of your home would keep the devil away!5. Later in the year the elder plant's berries will go purple which can be popular in home-baking and cooking - not just gin-making!  How The Botanical Engineers use elderflower...  From cocktails, perfect serve recommendations to actually creating a new gin for our GinFriends to enjoy. Creating Pickering's Summer Flavours - BTS   Behind the scenes- where we bring our multi-skilled Pickering's team together! Quinn in the picture below is actually our Distillery Operative, come professional photographer and Photoshop whizz! Together with our Co-Founder, Marcus and Brand Manager, Rachel, Team Pickering's set out for a day of photography. With the luck of some sunshine, we created a picnic scene in the garden to get the perfect first shots of Pickering's new summer flavour.     BTS in Summerhall Distillery!   Where new Pickering's products are born... After our botanical engineers perfected the recipe for four new summer flavoured gins, Team Pickering's worked together to bottle and hand-wax 4000 bottles! Like the sound off £5 Negronis? Us too! Pickering's Red Top is currently running as the house Negroni for £5 at new Edinburgh bar, The Wildcat. You can enjoy a guilt free Pickering's Negroni (or two) until the end of June!   The Wildcat is a classic cocktail bar and locals haunt in the heart of Tollcross, run by two old school bartenders- Will and Cam- with a a passion for good drinks. They serve up cocktails, beer, wine, whisky and all the rest in a cosy venue on Tarvit street, so show them some love and head down for a £5 negroni and a good time!   Will and Cam are both cocktail bartenders with 20 years of experience between them, working at bars all over the world, and met whilst bartending in Edinburgh bonding over a love for no fuss classic cocktails and an honest approach to service. Now that lockdown is lifting and we're starting to see some life brought back into the city, Will and Cam recently took over the premises and relaunched The Wildcat on Tarvit street. The Wildcat is a cosy side street venue that was formally a theatre performers local for many years known as Burlington Berties, playing host to legends such as Sean Connery and Cillian Murphy. It's been through many guises and owners in recent times but Will and Cam are looking to take it forward as an easy going but high quality locals cocktail bar, with riffs on classic drinks, and engaging deals. Edinburgh based distiller, Pickering’s Gin is celebrating the easing of lockdown by showing its support to the on-trade, giving away 100 free gin and tonics to guests of new local Edinburgh bar. Nestled in the heart of Summerhall Arts Venue, Pickering’s Gin shares its home with The Royal Dick Bar and the newly launched Gallery Bar. In-conjunction with the opening night of The Gallery Bar on Thursday 20th of May, the first 100 guests who order a meal will be able to enjoy a Pickering’s Gin and tonic on the house! Pickering’s classic red top gin will be up for grabs, based on an old Bombay recipe, handwritten in 1947. Distilled from nine botanicals, this fresh and light gin will be served with Indian tonic water and fresh grapefruit to guests at the opening night of The Gallery Bar. Matt Gammell, Co-Founder and Head Distiller comments, “This is some really positive news for Summerhall. Being able to support our residents and the trade after such tough times is all the more rewarding. It’s great to see our local pubs full once again and as a small distillery in a close-knit community at Summerhall, I wish the team at The Gallery Bar the best of luck for opening night”. With locals able to enjoy drinks outdoors, the reopening of The Royal Dick Bar in Summerhall Courtyard has faced huge demand, having been fully booked since mid-April. Alongside the latest government guidance, indoor drinking can commence from 17th of May and Summerhall anticipates for alike demand ahead of the opening of The Gallery Bar. Marcus Pickering, Co-Founder and Head of Export at Pickering’s Gin added, “It’s been a delight to see life brought back into Summerhall and our courtyard now that restrictions have eased. The opening of the new Gallery Bar will heighten this buzz and it’s a privilege to be able to show our support by providing guests with G&Ts on us. I’m very much looking forward to enjoying a tipple with the team on opening night.” The Gallery Bar has been fully refurbished bringing the flair of Summerhall’s residents under one roof. Now Providing Hand Sanitising Spray to Frontline Services

Now Providing Hand Sanitising Spray to Frontline Services. Please email sanitiser@summerhalldistillery.com At times like these, we all should step up and do our part. As of today, Summerhall Distillery will switch our available resources to the production of hand sanitising spray. We have developed the spray to supply this product at cost, direct into the supply chain of frontline services- such as the NHS, emergency services, schools, and care homes- to sanitise surfaces and keep their workers safe. We currently have no plans to retail this directly either via our website or our distillery. For the safety of our team, please DO NOT come to Summerhall Distillery looking to buy the product- even if you are a representative of a frontline service. Instead, please send us an email to sanitiser@summerhalldistillery.com. We will be prioritising initial orders to supply the most in need. Why at cost? As a small distillery with limited financial resources, we want to ensure that we can sustain this supply of sanitising spray into the months coming. This is not a marketing gimmick and we’re not in this for a quick buck. We want to do our bit to bolster the supply chain and ensure that frontline services can keep themselves and others safe at this worrying time. In the meantime, we would like to reassure our customers that we have ample stocks of our gin made and ready to go and will be selling from our website. In order that we can prioritise the production of the sanitiser, all deliveries (including those within the Edinburgh City Bypass) will now by shipped by Parcel Force. Following its massive popularity last year, the Cocktail Village has returned to Festival Square, even bigger and better than before with19 pop-up bars, live music, a cosy covered outdoor street food area and our EnGINe 47 dispensing cocktails direct from our Thirst Extinguishers!
