Pickering’s is so spectacularly smooth you can actually enjoy it neat over ice.

Here are our favourite twists on some of the world’s most famous, familiar and forgotten cocktails.


Grapefruit & Orange Granita


1 bottle Pickering's Pink Grapefruit & Lemongrass Liqueur
250ml Fresh Orange Juice
250ml Pink Grapefruit Juice

Method: Combine all 3 ingredients into a freezable container. Place container in the freezer overnight (or 8 hours), remove and mess around with a fork. Put back in the fridge for another 8 hours/overnight. Remove when the mixture is full of chunky ice crystals. Serve in a bowl with a teaspoon and a twist of grapefruit.


The General Gammell


50ml Pickering’s Gin
25ml Fresh Lime Juice
20ml Raspberry Syrup (buy it or make your own!)
TOP Ginger Beer (the more fiery, the better – we like Bundaberg)


Method: Shake the first 3 ingredients with ice, then strain into an ice-filled Collins glass. Top with ginger beer and garnish with a lime wedge and a raspberry.


Arthur's Seat Affogato


30ml Pickering’s Pink Grapefruit & Lemongrass Liqueur
3/4 Scoops of Your Favourite Ice Cream or Sorbet

Method: Simply pour an Espresso cup full of Pickering’s Pink Grapefruit and Lemongrass Liqueur over your choice of ice cream/sorbet and enjoy!


Perfect Pickering’s Martini


60ml Pickering’s Gin
20ml Bianco Vermouth
2 dash Orange Bitters


Method: Stir over ice in a well-chilled mixing glass for 25-30 seconds. Double strain into an ice-cold coupette/martini glass and garnish with a pink grapefruit twist.


Iced Tea Spring Punch


1 Bottle Pickering’s Pink Grapefruit & Lemongrass Liqueur
750ml Tea
1 Litre Water
350g Caster Sugar
12 Lemons (peeled and juiced)

Method: Peel and juice 12 lemons and place the peels in the sugar overnight. Fill a BIG bowl with all of the Liqueur, tea, sugar with lemon peels in, water and lemon juice and stir until the sugar has dissolved. This will keep overnight nicely if prepping in advance.

When it's time to serve, fill the bowl with ice, chopped fruits and top with Prosecco to taste.


The Valentino


30ml Pickering’s Gin
20ml Cherry Brandy
40ml Freshly Squeezed Pink Grapefruit Juice


Method: Put everything in an iced shaker and shake hard for 20-25 seconds. Strain into a well-chilled coupette/martini glass and garnish with a pink grapefruit twist.


Pickering’s and the City


35ml Pickering’s Gin
20ml Elderflower Liquer
40ml Cranberry Juice
7.5ml Lime Juice


Method: Add everything to an ice-filled shaker and shake vigorously for 20-25 seconds. Double strain into a well-chilled coupette/martini glass. Garnish with a lime wedge.


Bombay Sour


50ml Pickering’s Original 1947 Gin
25ml Lemon Juice
25ml Apple Syrup (reduce concentrated apple juice by heating in a pan)
½ tsp Tamarind Paste
5-10ml Egg White

Method: Add everything to a shaker WITHOUT ice and shake hard for 25-30 seconds. This emulsifies the egg white and produces a light, creamy foam. Add ice and shake hard again for 20-25 seconds. Strain into an ice-filled rocks glass and garnish with a lemon slice.


Lavender Negroni


25ml Pickering’s Gin
25ml Campari
25ml Lavender Vermouth


Method: Add everything to an ice-filled rocks glass and stir gently for 45 seconds to 1 minute. Garnish with a pink grapefruit twist.


Southside Royale


50ml Pickering’s Gin
25ml Lime Juice
25ml Sugar Syrup
7-8 Mint Leaves
SPLASH Prosecco


Method: Add everything to an ice-filled shaker and shake vigourously for 20-25 seconds. Double strain into a well-chilled coupette/martini glass and top with dry prosecco. Garnish with a fresh mint leaf.


Prince Albert Fizz


25ml Pickering’s Navy Strength Gin
5ml Absinthe (French works best)
20ml Sugar Syrup
25ml Lemon Juice
TOP Prosecco


Method: Line the glass with the fizz and allow to settle. Add the gin, absinthe, lemon and sugar then top up with more prosecco. Stir VERY gently to incorporate all the ingredients then garnish with a lemon twist.


The Exit Line


25ml Pickering’s Navy Strength Gin
25ml Green Chanteuse
25ml Maraschino Liqueur
20ml Citric Acid


Method: Add everything to an ice-filled mixing glass and stir gently for 45 seconds to 1 minute. Double strain into a well-chilled coupette/martini glass and garnish with a thinly sliced lime wheel and a maraschino cherry dropped in the drink.


The P’s Knees


50ml Pickering’s Original 1947 Gin
25ml Lemon Juice
25ml Freshly Squeezed Orange Juice
15ml Honey (or 25ml of 2:1 honey water)


Method: Dissolve the honey in the juice and then add everything to an ice-filled shaker. Shake vigorously for 20-25 seconds, double strain into a well-chilled coupette/martini glass and garnish with an orange twist.

20ml White Crème de Cacao
25ml Coldbrew Coffee
40ml Sweet Cream
5ml Egg White


Method: Add everything to a shaker and shake hard for 20-25 seconds. Add ice and shake again for 20-25 seconds. Strain into a well-chilled coupette/martini glass and garnish with grated nutmeg and cinnamon.


Spritz


50ml Pickering's Pink Grapefruit & Lemongrass Gin Liqueur
75ml Prosecco
50ml Sparkling Water


Method: Add all ingredients to an ice-filled stemmed glass and stir gently for 45 seconds to 1 minute. Garnish with a pink grapefruit wedge and a sprig of basil..
